Donna Hay fast melt and mix chocolate coconut cake

You may already know I worship at the shrine of Donna Hay. My bible is Modern Classics Book 2 and it is a well-thumbed book. When a lovely friend at work announced she was leaving for an amazing job opportunity I knew a choc cake was in order.

This is a melt and mix cake, meaning you chuck it all in and away you go – no fuss, no faff and no KitchenAid needed. I reduced the sugar [like I usually do].

GATHER:

250g melted butter, slightly cooled

3/4 cup milk

1 cup caster sugar

1  ½ cup plain flour

1 ½ teaspoons baking powder

3 eggs

1 ½ cups coconut [I used a mix of dessicated and shredded]

¾ cup sifted cocoa

LET’S GET TO IT:

Preheat oven to 180C, grease and line a 20cm round cake tin with baking paper. Put everything in a large bowl and whisk until smooth, tip into tin and bake for 40-ish minutes.

When cold ice with chocolate ganache [see the recipe here: chocolate ganache] and sprinkle with extra shredded coconut.

      Same – all in one bowl & bung in the oven. I don’t *get* why some people insist on packet mixes, this is as simple as ABC.

      Indeed – my stand by, go to Donna Hay ganache recipe. I always have a pot of in the fridge x

    Hey hungry mum, gotta love Donna Hay! I’m more of a melt & mix gal too. Of course if I’m making something a little more involved I’ll get those beaters out, but cakes can be so simple and just as pleasurable without the fuss! Looks great 🙂

    I made a very similar thing on the weekend, trying to use up a whole lot of coconut. I have that cookbook and I didn’t even look at it! The proportions are a little different to those I used, I was thinking it was a recipe that could stand variation. Must try.
