Easy tomato soup

Winter is well and truly here in Australia. I am probably the only person in Sydney cheering for the cooler weather. I am not a fan of the heat and humidity but am absolutely pro-boots, coats, scarves, heaters and all the other trappings of winter. Winter also allows me to indulge in some of my favourite foods: soups and puddings.

And soup is just as warming. In fact I have just finished a bowl of Asian-inspired soup for lunch. I will have to share that recipe, too.

I used to love tomato soup as a child so I thought I would create a recipe to capture the warmth and happiness that comes with eating a bowl of soup.

This easy, healthy tomato soup recipe uses just a handful of ingredients that you’re likely to have in your kitchen so there is no excuse for ever buying tinned soup again. You can quickly make this soup after getting home from work and it reheats nicely so is perfect to take it to work the next day.

GATHER:

1 teaspoon minced garlic

½ an onion finely diced

splash olive oil

2 tins crushed tomatoes

2 tablespoons tomato paste

½ – 1 cup vegetable stock, depending how thick you like your soup

1 tablespoon soy sauce

S&P

vegan yogurt – to serve

fresh parsley ­– to serve

Easy tomato soup.

LET’S GET TO IT:

In a medium size saucepan over a medium heat add the oil and allow to warm up for 30 seconds, then fry onion and garlic until just starting to colour.

Carefully add the crushed tomatoes and tomato paste, stir, then add in stock and soy sauce. Allow to simmer for 10 minutes, then add salt and pepper to taste.

Remove from heat, blend with a stick blender then ladle into bowls to serve.

Add parsley to each bowl and yogurt if desired.

    I love rich, thick tomato soup in Autumn and Winter. It’s warmly comforting against the chills but it’s got that summery tang to it still.

    I forget about our differences in seasons but agree that a bowl of tasty soup can’t be beat on chill days.

    I’m a fan of the cooler weather as well, as I’m sure most baking enthusiasts are. It’s hard to get excited about turning on your oven, when you’re sticking to your panties… Not sure that came out right, but you know what I mean 🙂 … Your soup looks wonderful, and I look forward to enjoying it with a toasted sandwich, when the cooler weather returns up here.

    As I sit in front of my roaring fireplace (jealous, its okay you now where I live :p) I could quite easily scoff a bowl or two of this. A slice of toasted sourdough with a splash of olive oil. Yup, heaven.
