Winter is well and truly here in Australia. I am probably the only person in Sydney cheering for the cooler weather. I am not a fan of the heat and humidity but am absolutely pro-boots, coats, scarves, heaters and all the other trappings of winter. Winter also allows me to indulge in some of my favourite foods: soups and puddings.
I have shared some delicious winter puddings here before (check them out here)

And soup is just as warming. In fact I have just finished a bowl of Asian-inspired soup for lunch. I will have to share that recipe, too.
I used to love tomato soup as a child so I thought I would create a recipe to capture the warmth and happiness that comes with eating a bowl of soup.
This easy, healthy tomato soup recipe uses just a handful of ingredients that you’re likely to have in your kitchen so there is no excuse for ever buying tinned soup again. You can quickly make this soup after getting home from work and it reheats nicely so is perfect to take it to work the next day.
GATHER:
1 teaspoon minced garlic
½ an onion finely diced
splash olive oil
2 tins crushed tomatoes
2 tablespoons tomato paste
½ – 1 cup vegetable stock, depending how thick you like your soup
1 tablespoon soy sauce
S&P
vegan yogurt – to serve
fresh parsley – to serve
LET’S GET TO IT:
In a medium size saucepan over a medium heat add the oil and allow to warm up for 30 seconds, then fry onion and garlic until just starting to colour.
Carefully add the crushed tomatoes and tomato paste, stir, then add in stock and soy sauce. Allow to simmer for 10 minutes, then add salt and pepper to taste.
Remove from heat, blend with a stick blender then ladle into bowls to serve.
Add parsley to each bowl and yogurt if desired.
Great post
thanks 🙂
Your tomato soup looks so creamy and delicious!
Thanks Antonia – it is soup weather again in Sydney today, I should make some more 🙂
I love rich, thick tomato soup in Autumn and Winter. It’s warmly comforting against the chills but it’s got that summery tang to it still.
oh yes, it is just pure comfort in a bowl x
I forget about our differences in seasons but agree that a bowl of tasty soup can’t be beat on chill days.
Thanks Lulu 🙂
I’m a fan of the cooler weather as well, as I’m sure most baking enthusiasts are. It’s hard to get excited about turning on your oven, when you’re sticking to your panties… Not sure that came out right, but you know what I mean 🙂 … Your soup looks wonderful, and I look forward to enjoying it with a toasted sandwich, when the cooler weather returns up here.
Ha ha- I do get your meaning! I love toasted sandwiches too 😁
It looks lovely and thick! I’m not a lover of the cold weather but the food is the best part of it 😀
Thanks! Winter food is the best food 🙂
Thank you so much for this post! Finally a vegan tomato soup that looks amazing! I am definitely going to try this one!
Oh, thank you! It is so warming and such a cinch to make. Hope you love it 🙂
I’m loving the cooler weather too, which is of course all the reason to make more soup! This looks delicious
Isn’t this weather lovely? Today I got to wear my big coat, red boots, scarf – I was a happy camper x
Fantastic round-up and that tomato soup finale sounds delicious. There’s something so comforting about a bowl of tomato soup for lunch on a winter’s day. Love it!
Thanks! I may have to make this soup again – tomorrow is tipped to be the coldest day in Sydney for many years #yay
This is an amazingly easy recipe! And I love tomato soup so I will remember it the next time I have a craving for it 🙂
Easy is how I roll 🙂 Thanks Tandy, hope you love it.
As I sit in front of my roaring fireplace (jealous, its okay you now where I live :p) I could quite easily scoff a bowl or two of this. A slice of toasted sourdough with a splash of olive oil. Yup, heaven.
I am campaigning hard to get a fireplace, I have always wanted one. Maybe I can bring soup to yours and we can both enjoy the fire 🙂
This sounds amazing, going to try it tonight! Off to buy some crushed tomatoes 😍
Oh, that’s excellent! It is a lovely soup, hope you enjoy it.
